This is an experimental lot featuring a multi-stage processing method developed to unlock new flavour profiles. The coffee is first processed as a honey, building sweetness in the cup. 

It is then slow-dried in an oxygen-deprived environment inside a dark room. This controlled fermentation environment produces even, consistent microbial activity resulting in a cleaner and brighter expression than conventional anaerobic methods.
